As promised, here are few pictures of me in my Midnight Fairy Costume. Our event went really super well. It was a great success! It as also a lot of fun and the guests had a fantastic time. On the other hand, it was sooooooo much work. Not only the last couple of months of planning but the set up was huge. We set up a whole forest/fairytale/magical scene on campus. A few of us dressed up and had a blast doing it. I had to lose the fairy wings because I kept poking people in the eye and getting caught in doorways. Not fairy cool.
I love and hate events. I love the planning and the final product but hate all the work. But I am a pretty good event planner and if the event goes well and everyone has a fantastic time, it's worth the work.
This weekend I have a big event at work so I have been wicked busy. I won't be blogging any time soon. I am working the whole weekend. I will be dead tired but Monday!
But I will resume blogging next week since now my life settles back into 4 day week and work slows down.
If you are lucky and I remember to take pictures at the event, you might get to see me dressed as a fairy since the theme of our event is: Midsummer Night's Dream. Yes, a fairy. I did find a really cute Black velvet fairy outfit complete with a tulle apron skirt and sleeves. I also have giant black fairy wings and a wand. To complete the outfit, I got some cute fairy shoes and a woodland fairy tiara.
On Sunday we had come back from our mini weekend trip to Harrah's Cherokee and weeded the garden. We harvested our first veggies of the season. We had cucumbers and some yellow squash and one zucchini.
We meant to weed more during the week but because of rain and then a freak storm, we didn't get back to the garden until Thursday. On Wednesday, we had a terrible storm come through. We had just gotten into the car and crossed the bridge over the river to head into town when the storm came in and slammed Sylva, NC.
There were trees down, mini tornadoes and a lot of people with power out. When we drove back to the house, we had to take a detour to the River Road and from across the river, I noticed that our house had no power. It was terrible. It sucks not having power. The next morning we still had no power and we both headed off to work early.
When I got back to the house on Thursday, our power was still out. I knew we would have to go out to dinner again. To entertain myself since I had no internets and/or TV, I decided to go into the garden and look around.
What I found was a whole bunch of zucchini that had grown overnight!! Not only a lot of zucchini but giant mutant zucchini. One was as long as my arm. WTH?????
Anyway, I took bags load to work since there is no way we could eat all this damn squash. But since we got our power back Thursday night, I also used some of it to make my Willy-Nilly squash/zucchini casserole. I have made this before but there is no recipe. I actually learned how to make this by tasting one and then figuring out what ingredients should be in the recipe.
Here is my recipe. I took the giant mutant zucchini and two yellow squash and diced them. I browned them with some butter and olive oil. I added salt and pepper. I also added garlic and onion powder. Then I added some seasoned bread crumbs.
I made my famous cheese sauce. Basically, it's making a roux (equal parts flour and butter), then adding mustard powder, salt, pepper, garlic and onion powder. When the flour is cooked a little I add a little beer and milk to make it into a sauce. Then you add cheese. I added a mixture of sharp cheddar and some Colby/Monterrey Jack. I use the grated cheese because I am lazy.
Once the squash/zucchini mixture is a little cooked down, I added bread crumbs to hold it together and to take out some of the liquid. Then I put it in a casserole dish and added the cheese sauce. Then all you have to do is bake it until it is golden brown.
The chicken is easy peasy. I decided to roast a whole chicken. I took some lemons, sage and garlic cloves and shoved them up the chicken's ying yang. I put some olive oil, salt and pepper on the skin. Then I roasted it for about an hour at 350 degrees.
The chicken was juicy and tender. The squash casserole was actually quite tasty. I suspect we will be having a lot of squash/zucchini casserole a few times a week because when I looked last, the garden had more.
We also have some tomatoes already but they are still green. I really can't wait for those to come in!!
Okay we had a great weekend. We went off to Harrah's Cherokee Casino and Resort. I got free tickets to see a show so we decided to make it a mini trip. We arrived and we also had a comp room, which was really nice. Harrah's Cherokee has added tons of new areas and we got a room in the new section of the hotel and the rooms are really nice. I love that they are expanding the casino and adding new restaurants and shops.
Anyway, we arrived and then headed to do a little gambling. I lost my shirt. The slots were tight this trip. Boo! But I had a great time. Give me bells, whistles and bonus games and I am one happy camper. Yes, I am easily amused. We then had dinner about 5pm and then headed up to the room to relax before the show. The show was some Rock n' Roll thing with Roy Orbison, Buddy Holly and Elvis impersonators. It was interesting.
We liked the Buddy Holly the best. The Roy Orbison impersonator looked like him and was good too but I am not a huge Orbison fan. The Elvis guy took himself a little too seriously. I swear. He was singing random Elvis songs I never heard. I am an Elvis fan and I wanted to hear the hits. He was Fat Elvis. At one point I wanted to scream out, can you renew our vows. Hey, I didn't get my Fat Elvis wedding so I am on a mission to have Fat Elvis vow renewal service.
There were a lot of older people around us. When me and Tom started goofing on the show and dancing in our seat, a woman next to him gave me the hairy eyeball. I gave it back to her! The woman next to me did not move once, I thought maybe she was dead. At least her husband was grooving along. It was a little boring and I wanted to get up and dance around but I wasn't drinking and I knew Tom would poo poo that idea. It wasn't that I really wanted to dance, I just wanted to cause a little havoc.
We left a little early as Fat Elvis was a snoozefest. Then we hit the casino for a little while more and more of my money was taken. I cannot go back to Harrah's Cherokee for a while. But I am going back in September because I have Rick Springfield tickets!! WOO! Love him. Of course, Tom is refusing to go with me but I was like whatever I will go alone. I figured there will be a zillion middle-aged Rick fans there anyway. And if Tom is not there, I can get a little crazy and actually dance in the aisle! There is no doubt I will do that. It's probably better he not go because I would just embarrass him.
The next day we headed home after a little more gambling in the morning. Then we headed off to have lunch at Granny's Chicken Place in Waynesville/Maggie Valley. I wrote about that place a few months ago. It was delish. After lunch it was back home.
Since we have been away for so long, we have had no time to work on our garden so we both got out there and started weeding. I wish I would have a picture as proof that I actually was on my knees weeding because some people are saying, oh no you didn't. But I did. Can I just say that weeding sucks the big hairy ones? It's a lot of work. But we got most of it done until I got tired and came in and before a huge storm came in and Tom had to stop.
The good news is that we were able to harvest veggies!! We had cucumbers, yellow squash, one zucchini, onions and some lettuce. Yummo. We also have tomatoes but they are still green. If I wasn't on a mission to eat better, I would grab some of those babies and fry them up because I love me some fried green tomatoes!!
So that was our weekend. We had a good time except the weeding part. But I am so excited about our garden! I cannot wait for those tomatoes are ready to be picked!
