Our Bounty!

This weekend we went out to the garden to harvest some of our veggies. We had quite a bounty. Our squash is completely out of control and the cucumbers have run amok! Everyday we have a zillion cucumbers!

We had a few tiny cherry tomatoes. We had lots of herbs and lettuce. We also had some green beans, green peppers, a head of broccoli and spring onions!

I used the lettuce to make my world famous watermelon feta salad. I used the onions and tomatoes and cilantro for a pico de gallo. And, of course, I sauteed some squash in butter as a side dish.

I tried making refrigerator cucumbers but the recipe went totally wonky since I didn't really follow one. I must go back and try again. This time I might follow the recipe.

Shake, Rattle and Roll

Tuesday night around 10:40 as I was watching "Chopped" in bed, we had an earthquake. Yes, you read that right. An earthquake.

Now, I am not a stranger to earthquakes having grown up in Los Angeles. I have lived through many. But I never imagined that there were earthquakes in the mountains of Western North Carolina. WTH?

So there I was watching "Chopped" and I was dozing off so I was a little out of it. Anyhow, there I was when all of a sudden I feel a rumble and then we feel the house shake and rattle a little.

My first reaction was to look over at Tom who said "what the hell was that?" My first reaction was it was an earthquake because it was a ground up rumble then a tremor. It was a classic earthquake shake. But then I thought about it a little more and dismissed it since I thought there were no earthquakes in North Carolina. I figured it was thunder or something exploded nearby.

Of course, since I was in bed there was no way lazy ass was going to get up and investigate. I kept watching the show and then went to bed. The next morning, it was confirmed that it was an earthquake. It was a teeny one around 2.0 but it was an earthquake.

Here I thought all I had to worry about living in NC were fires and floods, now I have to deal with earthquakes. Sigh. . .

Pura Vida ~ Costa Rica Trip Recap

Okay this trip was more business and family instead of a vacation. So I spent most of my time with the family and not jet setting around the country. I also don't have that many pictures because I was a huge slacker.

It also rained for 3 days straight and some roads were washed away so the little trip we had planned was cancelled. We did a little mini staycation at a local hotel but that was a bust since the hotel was older than god and reminded me a little of the hotel in The Shining but in a tropical setting. We wanted to relax and swim but it rained that day as well.

The trip was not a bust because what I went to do, got done. I saw my mom, dad and sister and was able to relax a little. It is always good to be in Costa Rica. I drank good coffee and ate some good food. I also got acupuncture, a massage and got my hair cut by my favorite hairdresser ever, Eduardo. He always calls my hair a horror but then works magic. He is like Eduardo Scissorhands.

Happy Father's Day!

I would wish Tom a Happy Father's Day but we have no kids. He is a father to Scout but I highly doubt he is getting a present from her.

To my dad, I want to say Happy Father's Day. My papi is a good guy. He is a little kooky and I think I got a lot of that kookiness from him. What I love about my dad is that he supports whatever we do as long as it makes us happy. He is non-judgmental about everything and I like that. He doesn't read my blog but I would still like to say: I love you.

Will be off for a week!

Well, I won't be fishing but I am heading back to Costa Rica for family stuff. I will be back in a week. In the meantime, poor Tom has to be without me for a whole week. But at least he will be here to take care of Scout and our garden. Hopefully, I will be able to post something the week I am gone but who knows since I am lazy and will opt to do nothing than to try and post!

Random Weekend Photos

Saturday we went to see K.D. Lang in concert and she was amazing!! Her voice is incredible and she puts on a great show. We loved it. My pictures are iffy at best.

These are some random garden photos. The garden is so beautiful. I already harvested lettuce, arugula, cucumbers, radishes, cauliflower and, of course, herbs. It is amazing being able to walk out, grab some lettuce and veggies and make a salad. I cannot wait for the the tomatoes to be ready!
