Yes, I have been MIA

I know it's been a while since I have blogged but this past week was my insane week at work. We had 2 events, one Thursday night and one Sunday night. I had so much work to do!!

Luckily, both events turned out great!!

The first event was a patron party. Our guests were treated to a fabulous dinner by Chef James Boyce. The event was held at a horse farm. Now that sounds funky but it was the most amazing place ever!

They also had the most beautiful Gypsy Vanner horses that the hosts breed. The decorations were beautiful. The weather perfect. I had to pitch in and help serve. Luckily, I didn't spill anything on anybody. That would have been awkward.

I also got to help the chef plate the food. It was really a wonderful event.

Sunday's event was a little more involved. It is a Taste of event that had several local restaurants and 2 celeb chefs as well. We had music, dancing, drinks and lots of tasty food.

We had a huge crowd and the night was once again perfect. I think we raised quite a bit of money that will help the school I work at. YAY!

But I am glad the events are over! I love coordinating events and planning them and being involved but they are hard work and I am beat.

Luckily, tomorrow we head out for a little rest & relaxation close to home for a couple of days! We are headed to Lake Lure where "Dirty Dancing" was filmed. It is close to where we live but I think I need a little bit of doing nothing!

We will fish, swim and relax. Hopefully, I will get some books read. I don't think I will have internet service. I truly believe Tom did that on purpose. But I can still use my phone if desperate and I do get desperate if I can't access the internets!

So I will still be MIA!

Harvest Time

I have been a little MIA because I have been busy at work. We have 2 events next week and I have had to work extra. I am also being a good girl and getting on that stupid treadmill almost every day. Sigh, being healthy is hard work. But at least I am doing it.

The garden is dying. This year was a weird year. The squash and cucumbers did great but the tomatoes are dying out because we had over a week of scorching weather. We do have tomatoes but the leaves are all gone. I can tell we will not have a harvest like we did in previous years. We are lucky to even have any.

Luckily, we were able to get quite a few. There is enough to make a spaghetti sauce that I can store in the freezer and we can use in the winter. YAY!

Aside from that there is nothing new. I will be MIA next week since I will be working all hours from Wednesday to Sunday.

Garden Update

The heatwave has caused problems in the garden. The problem is really with the tomato plants. The 90+ degree weather for weeks has started burning the plants and they are looking pretty sad.

Luckily, it has rained for the past week so maybe they can come back. But we have some plants that are probably going to die. The funny thing is there are tomatoes on the plants but they look pretty bad.

The Past Week

This week was a short one for me at work. Hallelujah!

On the 4th, we headed out to Asheville to catch a baseball game and fireworks. We ate hot dogs and the Asheville Tourists won the game. It was actually nice to go watch some baseball.

I used to be a huge Dodgers fan when I lived in L.A. I used to go all the time and root for them. Then I moved to Miami and I wasn't able to go see a baseball game because the Marlins were not in existence. Then they changed the rules and divisions and baseball because sucky. Oh well.

Anyhow, it was cool and I never tire of fireworks because they are so spectacular.

On Friday, we went to Asheville to catch "The Amazing Spiderman" in 3D. I was iffy about it since I really liked the old Spiderman movies. But it was actually quite good.

The rest of the weekend was uneventful. We have been harvesting a zillion veggies from the garden. So much so that we have been giving so many of them away to friends. I did, however, decide to freeze some zucchini and squash for future use.

I have had to find recipes that require a lot of veggies so I can use them up. I will have a post with two recipes I have used coming up. I also harvested tons of basil for a fresh pesto sauce. Yummo!

The exciting part is that we have corn coming in. We also have sugar baby watermelons and the tomatoes are slowly ripening. I suspect though that the unbearable heat we have had here lately is affecting the garden. I am seeing some sun burn on the tomato plants. The lettuce couldn't hold up in the heat and sun.

I am hoping it does not affect the corn but who knows. I can only hope the heat wave breaks and it goes back to cooler temps and the garden doesn't suffer too much.

Aside from that nothing much going on around here. It's back to work on Monday. Boo.

Portobello Mushroom Burgers Recipe

In my effort to get healthier and cut some meat out of our diet, I have been experimenting with some meatless recipes. One of my new go to recipes is Portobello Mushroom Burgers.

I first tried this recipe years ago after seeing it on the Food Network. I stopped making it because we are meat eaters. But now that I am trying to find new vegetarian recipes, this was a recipe I had to bring back.

Now you carnivores out there are probably saying: no way does a mushroom taste like meat, right? Well, it is not exactly like meat but it has the same meaty texture and a wonderful taste is marinated correctly.

First I find the thickest and biggest mushrooms. When you get them home, take a paper towel and clean them off. Never ever wash mushroom with water because they will suck it up and that's no good.

Then I take the mushrooms and place them in a Ziploc bag. Then I make a marinade. You can use anything you want. I have a friend who uses Italian Dressing, which is quite tasty but filled with preservatives. I make my own.

I find that olive oil and a good balsamic vinegar really gives the mushrooms a great taste. So I mix equal parts of the oil and vinegar. I add sale and pepper and sometimes grilling spices. This gives the mushrooms a really nice flavor.

After the marinade is done, I pour it into the Ziploc bag and make sure it gets all over the mushrooms. Then I place it into the the fridge overnight.

The next day, I either grill them outdoors or fry them up in a pan. You can also broil them in the oven. The only thing I watch for is to make sure they cook well so the texture is soft.

Once they are cooked you treat them as they are hamburgers and put them between a bun and add whatever you normally add to your burger. I guarantee that you will absolutely love these burgers. Even Tom loves them!

If you don't want burgers, you can treat these as meat. At one of our local restaurants, they serve portobello mushrooms like steak and they are delicious. I also take any leftovers and use them in risotto or pasta.

This is a great vegetarian meal especially for summer.

Chilling on the Tuckaseegee River!

I don't have to tell you it was deadly hot this weekend. But, it was. UGH

We got up Saturday and did our chores. I also worked out all before 11:00 am. Then I went to the garden to pick some tomatoes and I could only stay out for minutes. It was that hot. Even Tom who loves being outside couldn't take it.

Luckily, the other day, Tom had bought us some inner tubes because we are planning a trip to the lake in August. So he said we should go out and take a dip in the river. The river runs feet from our front yard.

The only problem is that there is an embankment you have to go down and there is poison ivy and crap so we couldn't just go in. So we decided to drive down the river road to a little area where you can walk into the river.

It was heaven. At first it was cold but once we got in the tubes, it was fantastic. I finally got out of the tube and sat down because the current was pretty strong. But just being in the cool water on a bloody hot day was fantastic!!

If this heat keeps up, it looks like we will be going in the river a lot more often!
