Radish, Tomato and Onion Salad from the garden!

Our garden is going really well. We have been able to harvest squash, zucchini, onions, radishes, some tomatoes, cucumbers and herbs. Most of our tomatoes are still green but we should have a good harvest in a couple of weeks.

I had a Hodge Podge of veggies and decided to make a little summer salad. The salad is basically radishes, green onions and tomatoes. Slice up all veggies and place into a bowl. In another bowl, mix a tablespoon of good olive oil, a tablespoon of apple cider vinegar, a pinch of salt, a pinch of pepper, a pinch of celery salt and a squeeze of lemon! Mix up the vinaigrette and mix into the veggies.

You can eat it right away or let it sit a day in the fridge. The longer it sits the longer it gets pickled. Yummy.
