Roasted Tomatoes!

Our garden is dead now except for a few green peppers. Before it completely died, I grabbed the last of the tomatoes and roasted them up. I tried roasting tomatoes because it gives them a completely different flavor from using them fresh.

After I roasted the tomatoes, I used them as a pasta sauce.


I started with fresh tomatoes from my garden. 



Slice tomatoes and put on a baking sheet.


Slice some shallots.


Add shallots and olive oil to the tomatoes. Also add a pinch of salt and pepper. Bake for 45 minutes at 450 degree oven. Since my tomatoes were different sizes, I checked every ten minutes or so to make sure some of the smaller tomatoes were not burning.


I added some fresh garlic, basil and olive oil to the roasted tomatoes and used them as a sauce over pasta.
