How to re-purpose leftover chicken or turkey ~ Chicken or Turkey Enchiladas!

The other day, I had tons of leftover chicken from the roast chicken I made for dinner. When Scout was alive, I would feed her the leftover for a couple of days and she was in hog heaven. Now that she is gone, I just had tons of leftovers. You can also use leftover turkey from Thanksgiving as well. Just switch out the turkey for the chicken.

I looked in the pantry and found some cans of Enchilada Sauce. I decided to make chicken enchiladas. Luckily, I had all the other ingredients: cheese, green onions and tortillas. Chicken enchiladas are so easy to make and so delicious to eat. As long as you buy the canned sauce, you are good. If you were really fancy, you could make your own enchilada sauce but that's a lot of work. I always go for the lazy girl way! Here is how I re-purposed my leftover chicken.

Here are the ingredients you need. 

Chop up the green onions and chicken.
Remember you can use leftover Thanksgiving Turkey as well. 

Start putting together the enchiladas. Warm the tortillas to soften them up. If I had a gas range, I would do it by hand but now I just toss them in the microwave for a minute and they are good. My grandmother used to fry them up in a little oil until they were soft, then dip them in the enchilada sauce and then start rolling them. If I have time I do that but, again, this is the lazy girl way. 

Anyway, take a tortilla and add some chicken, cheese and green onions and roll them up.

Once the casserole dish is full of the enchiladas, then add the sauce over the top. Add some cheese over the sauce and then add some green onion on top as well. 

Put into a 350 degree oven for about 40 minutes.

The cheese get all melty and gooey. Yum! 

I like adding a dollop of sour cream on top before eating. YUMMO!
