Sesame Noodles with Chicken!


Tom wanted pasta but I was over making the same old pasta I usually make. So I thought long and hard about what to make. I scoured the internets and decided to try making sesame noodles. My problem is when I have tried to make Asian food, I fail miserably. Somehow I can't get the flavors right. But hey, I never give up trying so I dove in. I succeeded this time. My noodles came out freaking delicious! I was shocked especially since I didn't have all the ingredients needed and I, of course, did not follow the recipe. But hell, I'll take it. This recipe is definitely going on the dinner rotation! Here is how I made it:


I pan fried some chicken thighs. I added a little salt and pepper. 



In the same pan I fried the chicken, I added 2/3 cups of chicken broth, 1/2 cup of peanut butter, 2 tablespoons soy sauce and 2 tablespoons rice vinegar.  I also added a pinch of ground ginger since I did not have any fresh ginger. I would prefer fresh ginger. 



I chopped some carrots and onions. I didn't have green onions so I thought about adding just onions but in the end, I skipped the onions altogether. Next time I make, I am buying green onions because that would make the dish better. 



I cooked the sauce until it was smooth. I added a little salt and pepper to taste. I also tasted the sauce and adjusted by adding a splash of soy sauce or rice vinegar etc. 



I chopped the chicken into tiny pieces and added a little Sriracha to the sauce. 



I cooked the spaghetti and then put it in a bowl. 



I added the sauce to the noodles and mixed well. 



I then added the chicken and carrots and mixed. 



I served the noodles with some chopped peanuts and a sprinkle of sesame seeds. It was absolutely delicious!! I totally recommend making this dish! YUMMO!

  2. I was just browsing your "recipes" and am so happy to have found this one! This is a dish I love but which I've never made. I've got everything on hand except the Sriracha, so I'll probably make it when my spouse returns from his current trip. Thanks for the inspiration!
