Back from Los Angeles and the #VeryBadDayEvent!

All I can say is that I had such a good time on my trip to L.A. We visited Walt Disney's former home, met the producers, directors and writers of Maleficent and Planes: Fire and Rescue. We went to Disneyland!! We also saw Alexander and the Terrible, Horrible, No Good, Very Bad Day and Star Wars Rebels! We also visited the Walt Disney Studios and Disneytoon Studios.

I have tons of pictures and stories but I need to deal with my other blog right now. I will post some stuff soon but do not expect too much on this blog for the moment. But keep checking back because you never know when I will be inspired. I will also post links to my other blog so you can read about my adventures there!

Roast Chicken with Chimichurri and Spicy Aioli Potatoes - inspired by Michael Symon!



I love roasting chicken. It is one of the best meals I make. It is also easy to make. It is affordable as well. I usually take a chicken and throw on some salt, pepper and other spices and stuff it in the oven. I cook it low and slow and for hours. When it comes out, the meat falls from the bone. But I also like to try different chicken recipes because I like to mix it up or we would get bored of Roast Chicken. 

I decided to try a new recipe when I saw Michael Symon on his TV show make a delicious chicken and some amazing potatoes. He also made a chimichurri sauce. I got crazy and tried to recreate the recipe my willy-nilly way. Here is what I did. For the chicken, I have no recipe. You have to eyeball it and make it your own. I also made my own chimichurri because his was different and I did not like it.  I will give you some ingredients and amounts for the aioli though. 


Get a whole chicken and salt and pepper it, inside and out. Also stuff an onion up it's ying yang. I would rather stuff lemons up the chicken's butt. The onion really did not add anything to it. 



Take some fresh thyme and also stuff it up the chickens wazoo! I did not mind the fresh thyme in the chicken. The thyme added some flavor but lemon and thyme would be better. 



Slice up a lemon in thin slices. Loosen up the chicken skin and place them under the skin. Then rub a little oil on the chicken and place in a 350 degree oven for 2 hours. I leave it in more but that's me. 



To make the Carolyn's Chimichurri sauce you need the following ingredients: Lemons, salt, pepper, cilantro, flat leaf parsley and garlic. If you want it spicy, add a few red chile flakes. 



Add the cilantro, parsley and garlic in a food processor and process. Then add the juice of one lemon and salt and pepper. process. Slowly add some olive oil so it emulsifies. 
Taste and season to your taste. 



That's it. Use this to top any protein. I love it on steak. I also use it as a salsa. It is the most delicious thing you will ever have! Okay, I am exaggerating. 



To make the Spicy Aioli Potatoes, start by frying up some delicious bacon. Once it is cooked, set aside and cut into pieces. 


Boil the potatoes. Use small red or yellow potatoes. The smaller the better. 



Boil and cook and then set aside to cool. 



Once the potatoes are cooled. Squash them with the palm of your hand. 



Fry them up in the bacon fat until they are nicely browned.

Here is the recipe for the Spicy Aioli:
1 cup mayonnaise
1-2 tablespoons Sriracha (depends how spicy you want it)
1 teaspoon smoked paprika
Juice of two limes - you can also use lemons
Lime zest
1 garlic clove chopped
salt and pepper
Mix it all up and pour onto the potatoes. I also chopped the bacon up and added it to the aioli! 

Put the chimichurri on the chicken and it makes a delicious meal. 


I will tell you that the Spicy Aioli is addictive. I use it on everything. You can have it on the chicken as well. I love it as a dip for veggies. It also makes a great spread for sandwiches as well. Try the potatoes though because they are one of my new favorite things to eat.

Wordless Wednesday ~ Trying to Stay Fit

This is my life now. I try to exercise once a day. I am hoping it becomes a habit that I won't break. Right now I am doing In-Home Walking with Leslie Sansone. If you hate exercise like I do and want to get fit. try her DVDs. I have a Jane Fonda and some Zumba. I also have some yoga tapes that I cannot do right now because of my bum knee. I am hoping I can get to those soon because I need some toning. I am not losing weight but have lost inches and gained muscle. Sigh, It's one day at a time right now.

Sauteed Kale and Bacon!

The other day we had dinner at a great restaurant here in Wilmington called RX. Along with my meal, was this kale dish with beans and bacon. It was one of the most delicious things I have ever eaten. That got me thinking about Kale.

Kale seems all the rage now. People are juicing it and cooking it and blah blah blah. After my Kale side dish at RX, I thought I should try making something with Kale. I decided that the best thing to make with anything is bacon. So here is my version of Kale and Bacon.


I used a pack of Kale. I should have used 2. About 6 slices of bacon and 2 cloves garlic. 



Fry up the bacon.



Take the bacon out and drain. Saute the garlic in the bacon fat. Yum! 



Add the Kale and saute. 



Once the kale is wilted add the bacon and a little salt and pepper. 



YUM!



That's it and it was delicious. Of course, you can also use another green leaf veggie but kale is quite tasty and, supposedly, it is great for you. I am not sure with bacon but bacon makes everything better.

My new Treadmill Playlist!

A few years ago I posted a play list that I used to get on the treadmill. I have a new one. I love this music because it keeps me focused and ready to do my 1.5 to 2 mile walks on the treadmill. I try to do 30 minutes of fast walking with 5 minutes of warm-up and 15 minutes cool down. Depending on how I feel, those times might change except for the 30 minutes. I need to get 30 minutes in regardless.


I have some great music on my phone so I use that to exercise with. I have gotten it down to a really good mix. Here is what I listen to. It varies sometimes but these songs are the core of my workout.

9-11 #neverforget

I don't celebrate 9-11 but I always remember it. I was fortunate that last year I was able to visit the 9-11 Memorial Site. It was moving and sad. It was beautiful and tragic. Here are some of my pictures.
